Whole30 Day 17: Carnitas Fries

Absolutely delicious!!!

Ingredients:
  • 12oz pkg fully cooked carnitas - or make your own! - I used Trader Joe's Traditional Carnitas
  • 2 lbs sweet potatos, cut into fries sticks or put them through a spiralizer for curly fries
  • 8oz pico de gallo or chop your own tomatoes, onion, garlic, jalapeño, cilantro
  • guacamole
Directions:
  1. toss sweet potato fries with evoo and season to taste
  2. bake at 450˚F for about 20 min.  
  3. if using packaged carnitas, heat according to directions
  4. when fries are done, top with carnitas, pico de gallo, and guacamole

Cucumber Salad

What do you do with the abundance of cucumbers growing in your garden or, as in my case, your husband brings home beautiful, giant cucumbers from the farmer's market?

You make cucumber salad!  Thanks to Kaylyn's Kitchen for this delicious recipe. Makes 2 generous servings or 4 side-dish servings.

Ingredients:
  • 3 cucumbers, peeled
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1 avocado
  • 1 T apple cider vinegar 
  • sea salt and ground black pepper to taste
  • gorgonzola or feta cheese, optional if you can tolerate dairy

Directions:
  1. Cut cucumbers in half lengthwise then slice into half-moons.  
  2. Peel and cut up the avocado into small cubes.
  3. Combine the cucumber, tomato, onion, avocado, and vinegar in a bowl and gently toss together.  
  4. Add in gorgonzola cheese and combine.  
  5. Season to taste with sea salt and fresh-ground black pepper.

Easy Tacos

 Sometimes you just don't feel like cooking.  This can barely be called cooking.

1 lb Trader Joe's grass-fed ground beef
Trader Joe's Salsa Verde
Trader Joe's Just the Leaves Romaine (bummer, not organic)
Trader Joe's organic cherry tomatoes
Organic avocados
Organic Pastures Raw Milk Cheddar Cheese

I sauteed the ground beef, drained the juices, and added cumin, sea salt, and salsa verde to taste (I don't use too much because my 10-year old is not a huge fan).


I put everything is separate bowls and called the kids to build their own tacos.

Another 2-thumbs up family favorite!
